I know another shrimp post, what can I do I have been in a shrimp state of mind for the last couple of weeks. This dish is a favorite of mine since I was in my teens, which was many, many years ago. My first taste of gambas was from the old Casa Marcos restaurant in Roxas Boulevard. Their gambas were delicious and never disappointed us when we ordered it. I remember when all the shrimps have been consumed I would use a piece of bread to scoop up all the oil from the plate, that's how good it was.
I loved the dish that I decided to learn how to cook it. Back then Google was not yet in existence, so I had to go to National Bookstore to look for a cookbook with a gambas recipe. Since finding that first recipe I have cooked other versions and have tweaked these to meet either our taste, preference or budget.
Here is a simple version that is quite budget friendly.
1/2 kilo shrimps
4-8 cloves of chopped garlic, the number of cloves depend on how much "garlicky" you want it to taste
1 small bell pepper, chopped
cooking oil or butter
Heat pan with either cooking oil or butter (or you can do what I do combine oil and butter). Then add the chopped garlic, when fragrant add the chopped bell pepper. After about a minute add the shrimps. Season with salt and black pepper. Cook until the shrimps turn pink and cooked thoroughly. Then serve immediately.
